Hearty sweet potato, spicy chorizo, red onion, corn, and black beans are cooked and seasoned then topped with sour cream and cilantro before being wrapped up burrito-style. These healthy gluten-free wraps are simple to make, wholesome, and perfect to enjoy for lunch or a light dinner any time of year! Here’s everything you need to make these delicious swiss chard wraps:

Olive oil + sweet potato – sweet potatoes sautéed in olive oil are satisfying and sweet, plus they’re loaded with vitamin A and fiber. Chorizo – there are two types of chorizo, Mexican chorizo and Spanish chorizo. It’s a flavorful, spicy sausage that comes in different shapes and sizes. Either variety works in this recipe. Red onion + garlic – red onion is subtly sweet and milder than regular cooking onion. We slice it up finely and together with the garlic it adds wonderful flavor to the filling. Corn – corn adds a pop of color, plus who doesn’t love its sweet chewy taste? Black beans – black beans are rich in antioxidants, fiber, and a variety of vitamins. They give these wraps a boost of protein and texture. Seasonings – we use a mix of smoked paprika, sea salt, and pepper for seasoning. Feel free to add chili powder, cumin, or any other spices that you love. Swiss chard leaves – large swiss chard leaves will be easier to fill and roll, so buy the biggest ones you can find! You can also use collard greens instead. Sour cream, chopped cilantro, and lime juice – this is what we use as toppings but feel free to add other ingredients like salsa, guacamole, sliced avocado, or your favorite hot sauce.
