And yes, it involves more cheese. Cabot cheese to be exact. I hope my baked Asian chicken rice balls with cheddar had you coming back for more! Cheesy dips have a special place in my relationship with the Hungryman. From the (almost) 8 years together, it has become evident that the combination of alcohol and cheese has an inexplicable way of enhancing our conversations. Especially for me, the magical duo just “makes” me say things like, “So how are we doing? Like how are we really doing?” Our very first date was at a Mexican restaurant and involved talking for 2+ hours over a ginormous bowl of chili con queso, an even larger baskets of chips, and a couple of margaritas (mango-flavored, of course). This would be a foreshadowing of many more dates to come. Some things just never change…^^ While the simple assembly of cheese and crackers suits us fine most of the time, I try to introduce an element of surprise every now and then to keep the Hungryman on his toes ;). Enter this Southwestern Cheesy Dip (or spread)….

This is a thick and creamy cheese dip as opposed to the more liquid-y queso kind.
Any leftovers, I like to refrigerate and serve the next day as a spread alongside some fresh veggies. It makes for a healthy and satisfying mid-afternoon snack or in this case, it shall definitely give you a healthy dose of energy to cheer on your team to victory…or to continue a conversation for hours to come.
