These savory mashed potatoes are the perfect pair with our creamy chicken mushroom recipe and a side of green beans with garlic scapes aioli. Simply boil the potatoes until tender, add the sour cream, butter, salt, and chives and mash until creamy. We just use a potato masher, but using a hand mixer will make them extra velvety. Top with freshly ground black pepper, if you’d like, and serve them warm with almost any dinner menu. It’s an easy and irresistible side dish for weeknights, holidays, and dinner parties that everyone will love!
Potatoes – we used a mix of yukon gold and russet potatoes for this recipe. Sour cream – this star ingredient adds creaminess to the potatoes and a little tangy taste. You can use light, if you prefer. Butter – for added richness and flavor. Sea salt – a couple of teaspoons of sea salt helps to bring out all the other flavors. Chives – the delicate flavor of fresh chives has a mild onion flavor with hints of garlic.
