Simply make a small change: just omit the english muffin, meaning you’ll have nothing to spread the cream cheese on. Just throw down a handful of delicious, peppery arugula, drizzle some olive oil over it, and make some ‘nests’ out of your smoked salmon. Set your eggs on top, and you’ll hardly notice the difference! Some people also add a splash of white vinegar to the pot – this is optional, but it helps coagulate the egg whites.
