Turn these tasty potatoes into an easy weeknight meal with our creamy champagne chicken and a simple spring mix salad. To make them, we simply slice the potatoes lengthwise, toss them in olive oil, season them with salt and garlic powder, and roast them until tender and golden brown. We finish them off with a sprinkle of parmesan cheese for a more savory flavor. Most of the cooking time is hands-off so you can prepare the rest of dinner while they cook. They’re easy to make, irresistible, and kid-friendly, too! Serve them as a comforting and savory side for brunch or dinner with just about any main. They’re great for roasting because they’re quick-cooking and become a wonderful golden brown color. We absolutely love them and think they’re the best potato around!
Fingerling potatoes – any variety of fingerling potato will work well in this recipe. Olive oil – for coating the potatoes before roasting, and locking in moisture. Garlic powder – for added taste and aroma. You could use fresh garlic, but it has a tendency to become overcooked and bitter at higher temperatures. Sea salt – works as a flavor enhancer. Parmesan cheese – for a savory cheesy finish.
Add some freshly cracked black pepper or finely minced garlic cloves at the same time you add the parmesan cheese for more flavor and an added kick. When they’re finished cooking, top with fresh garden herbs like parsley, thyme, or rosemary. Use a couple of different varieties of fingerling potatoes (small, big, purple, red, white, etc) to give your plate an interesting look. Slice them into wedges to make them into fingerling french fries, and serve them with a delicious dip!
They’re also perfectly paired with burgers like our chicken feta spinach burger or the best black bean veggie burger.
