If you love chickpeas, also try our chickpea pumpkin fritters, chickpea harissa soup, or flourless chickpea peanut butter cookies. Chickpeas are full of fiber and protein so we like to make a big batch for healthy snacking, too. They’re perfect for parties, road trips, movie nights, and so much more! They also make a great birthday, hostess, or holiday gift. Simply package them in a glass jar and tie a ribbon around it for a special DIY present!
Chickpeas – cooked or canned both work well. One 19-ounce can of chickpeas yields about two cups, exactly what is needed for this recipe. Olive oil – don’t skim on the olive oil, this is what helps make them crispy. Garlic powder – make sure it’s garlic powder, not fresh as it will burn in the oven. Nutritional yeast – this gives them a unique savory flavor, with the added benefit of B12. Sea salt – enhances all the other flavors and makes them pop!
Add your favorite spice blend like our Italian seasoning, lemon pepper seasoning, cajun seasoning, or herbs de provence. A simple spice combination we love is smoked paprika, cumin, and cayenne. Make them sweet. Swap the nutritional yeast and garlic powder for cinnamon and sugar for a tasty little treat!
Make sure your chickpeas are really dry – this is the key to making them extra crunchy. Don’t skimp on the olive oil. It helps coat the chickpeas and makes them crispy. When they’re done cooking, turn the oven off, crack the door open slightly, and leave the chickpeas inside while the oven cools. This optional step helps them get crunchier. Make sure that the chickpeas are completely cool before you store them. If you store them while they are warm (even a little bit) they will become chewy.
Use them as a salad topper; they’ll boost nutrition and add a wonderful crunch.
