All-purpose flour – we use regular, all-purpose flour. If you need, substitute a 1:1 gluten-free all-purpose blend. Sugar – granulated sugar gives these pancakes the perfect amount of sweetness. Baking powder + salt Egg – egg gives these pancakes structure and helps them rise. Milk – any milk or non-dairy alternative like soy milk, almond milk, or oat milk will work. Melted butter – melted butter keeps these pancakes moist and gives them a rich flavor. Use dairy-free if needed. Raspberries – fresh or frozen raspberries will both do the trick. If you use frozen, make sure to thaw them first and use paper towels to blot away any excess moisture. White chocolate chips – we love the combination of bright raspberries and sweet white chocolate chips. You can also use dark chocolate chips if you prefer. Butter, oil, or ghee – for greasing the pan.
To speed up the cooking, try using a couple of pans at a time. We usually cook four pancakes at a time, using one pan for each element on our stove. The cook time in the recipe card is based on using two pans at a time.
You can easily double or triple the batch for a crowd, and the leftovers freeze beautifully for a quick breakfast or snack.
Don’t let the pancake batter sit after you mix it – start making the pancakes right away. This is because the baking powder is activated as soon as you mix it with the liquids and it will lose its power after a while. The longer the batter sits, the less fluffy your pancakes will be. While we love the sweet-tart taste of fresh raspberries, you can certainly switch up the berries. Other berries that work well in this recipe are:
