For more ultra-refreshing margaritas, try our cucumber margarita and watermelon margarita. This pineapple margarita with fresh pineapple purée is what we reach for on hot sunny days. It’s ultra-refreshing and the kick of tequila hits just right every time. The fresh pineapple purée is an extra step, but it adds a really wonderful tropical vibe to the drink. To make it, peel and chop a quarter of a pineapple, toss it into your blender, and blend it until it’s smooth. Transfer the purée to a shaker or jar along with the tequila, triple sec, lime juice, and some ice. Shake until it’s cold, then pour it into glasses, and garnish with some pineapple. We give the glass a sweet and spicy rim which plays so well with the fruity taste of the pineapple. You only need three ingredients, and it’s an easy way to elevate your drink. Pineapple purée – we make fresh pineapple purée from pineapple chunks which gives this drink a bit of texture. You can certainly use pineapple juice if that’s what you have on hand. White tequila – white tequila (also known as silver tequila or blanco tequila) is clear and clean-tasting, making it a wonderful choice for mixed drinks. Triple sec – triple sec adds a straightforward, strong citrus flavor. You can also use another orange liqueur like Cointreau instead. Lime juice – only freshly squeezed lime juice will do. Roll the limes against the counter for easier juicing!

Here’s what you need for the sweet and spicy salt rim:

Sea salt – we a fine-grain sea salt. Sugar – granulated sugar is what we use. Cayenne – cayenne adds the spicy element. We use a modest amount so free to adjust the amount you use based on how spicy you like it.

Pineapple jalapeño margarita – for a spicy pineapple margarita, add a few slices of fresh jalapeño to the shaker. Frozen pineapple margarita – if you love a slushy margarita, add all the ingredients to your high-speed blender with a handful of ice, and blend until smooth. Grilled pineapple margarita – you’re hanging out on the patio, why not throw some pineapple on the barbecue? Grilling pineapple gives it a smoky flavor and brings out its natural sweetness. Grill the cored pineapple until lightly charred before adding it to your blender to make purée.
