What is overnight Weetabix?
Overnight Weetabix is a Tik Tok food trend that involves soaking Weetabix in milk and layering with yogurt and all kinds of fun, nutritious toppings. Just like with overnight oats and chia pudding, you can make it ahead of time and enjoy with all kinds of toppings. The difference is that rather than mixing everything together, you make layers for the overnight Weetabix. As a mom of two littles who wake up ready to eat, make ahead breakfasts are a Godsend! I hope this makes your mornings easier and more enjoyable as well! And you should totally try this custard yogurt toast, another viral Tik Tok recipe.
Ingredients
Weetabix breakfast cereal – These are wheat biscuits that have been produced in the United Kingdom since 1932! In Australia, it’s called Weet-Bix. If you can’t find it, this recipe will also work with plain shredded wheat squares. Milk – I like to use whole milk for flavor and the extra fat, which babies and toddlers need to support their rapid brain development. However, you can use any milk of choice, like oat milk or almond milk. Yogurt – Greek yogurt works best but you can also use plain, if preferred, or any dairy-free alternative. Toppings – I am going to show you how to make the peanut butter and banana version, but there are endless ways to customize this easy breakfast. See below for more ideas.
Step-by-Step Instructions
Note: I’m sharing how to make the pb and banana version. Steps 1 and 2 will always be the same, but the others will change depending on what you decide to add.
Variations
The Weetabix layer will always stay the same. Where you can have fun experimenting is the yogurt layer and the extra toppings! There is seriously no limit to the number of flavour combinations possible.
Yogurt layer
You can spread any of these on top of the yogurt or combine with yogurt in a separate bowl before layering.
Fruit (mashed or pureed) – like mangoes, fresh berries, and unsweetened applesauce. Peanut or nut butter – for babies, be sure to combine with yogurt as globs of peanut/nut butter are a choking hazard. Sunflower seed butter Jam – add any of your favorite. If looking for an easy homemade option, try this sugar free strawberry jam or mango jam. Honey or maple syrup – for added sweetness. You can use this 3 ingredient vanilla yogurt. Date syrup – a great no added sugar alternative
Alternative to yogurt
You can also leave out the yogurt completely and add all kinds of toppings just like with overnight oats. Simply spread on top of the Weetabix layer:
Grated carrots or zucchini Healthy cream cheese frosting – this isn’t just for desserts! Mashed sweet potatoes Fruit (mashed, pureed, sliced)
Toppings
Add these on top of the yogurt layer right before serving
Nuts – be sure to finely chop or grind depending on your child’s age as whole nuts are a choking hazard Seeds Granola Shredded coconut Fresh fruits, like blueberries, raspberries, pears
Tips for Success
There’s no need to take extra care to crush the Weetabix thoroughly. It will soften once combined with milk. I recommend using plain yogurt instead of flavored yogurt, especially for babies and toddlers, so you can control the amount of sugar. If you want to enjoy this as a filling dessert, you can add crushed cookies (like Biscoff), caramel, chocolate chips, etc.
