Oats – Quick oats or oat flour will work best as they absorb liquid quickly, resulting in a softer and less chewy texture compared to rolled oats. Do not use steel cut oats. Overripe banana – The browner the better! They mash easier and add a stronger banana flavor. Egg – helps create a light, fluffy texture. If egg-free, you can try adding 3 tablespoons of applesauce, yogurt, or milk. Butter – can also use melted coconut oil Milk – I prefer whole milk but use any milk of choice

Be sure to add the dry ingredients at the end. It will help the batter from bubbling over. The batter will rise significantly (and then settle) during cooking, so make sure to use a mug with enough height. Place a plate underneath the cup when microwaving to catch possible spills.
