It’s one of those recipes that’s even better when made ahead of time because the flavors have a chance to blend. In an air-tight container, it will stay fresh in the fridge for up to 3 days!

Cucumbers Mint Yogurt Lemon juice Garlic Sea salt

Use thick, plain, Greek-style yogurt for its wonderful creamy texture. Use seedless cucumbers or remove the seeds. We use mini cucumbers because they don’t have seeds. The seeds add too much moisture and take away from the creaminess. After grating the cucumbers, drain as much of the moisture as possible. You can do this with your hands, or use a tea towel or paper towel to squeeze out more of the liquid. Mince the garlic with a microplane or similar tool so it’s grated really finely.

  Serve mint tzatziki as a savory dip for fresh veggies, chips, warm pita bread, garlic herb carrot fries, on top of sweet potato fritters, or smeared on a chicken feta burger.
