If you’re after the perfect snack, try our no bake energy bites, coconut lemon energy balls, and peanut butter energy balls. We love the earthy taste of matcha, so we’re always looking for new ways to incorporate it into our day. The powder is so versatile and it works so well in these bites. It adds a pop of green color and a burst of flavor! To make them, simply add all the ingredients to a food processor and pulse until everything is mixed well. Chill the dough and then roll it into balls. If you’d like, you can roll the balls in a bit of honey or desiccated coconut, but it’s not necessary. They store well in the freezer so while you’re at it, make a double batch and pop them into your freezer for up to 3 months! These matcha energy bites are the perfect on-the-go snack for lunches, hikes, airplane rides, or anytime you need an easy boost of energy.

Rolled oats – regular rolled oats are what we use but quick oats work well, too. Use certified gluten-free if needed. Desiccated coconut – a finely flaked coconut is ideal and incorporates best into the batter. It adds a bit of sweetness and texture. Almond flour – you can purchase it or make your own using raw almonds in a high-speed blender. Cashew butter – cashew butter is creamy with a really mild flavor which allows the matcha flavor to come through. You can use any nut butter, just beware it might overpower the matcha. Honey – honey acts as a sweetener, but its stickiness also helps bind everything together. Use agave syrup as a vegan alternative. Matcha – a culinary grade or ceremonial grade matcha will work for this recipe. The matcha has a lovely earthy flavor and will give you a slight energy boost. Honey and shredded coconut – for rolling the balls.

Use a food processor or a high-speed blender so everything gets well mixed. You may need to scrape down the sides once or twice. If you don’t have a food processor, you can still make them, just substitute the rolled oats for oat flour and mix all the ingredients together in a bowl. If your energy balls aren’t sticking together, add more cashew butter (one teaspoon at a time) until they hold together when rolled. For an extra sweet treat, try adding some white chocolate chips. Matcha and white chocolate pair wonderfully together.
