Okay, maybe not exactly science, but who could say no to all the gooey, cheesy goodness mingling with hearty meat and satisfying lasagna sheets?! Not me, that’s for sure.But let’s be real, even my easy lasagna recipe needs a little bit more work than I’m willing to give on a busy Wednesday. On those hectic weeknights, when I want a no-fuss pot of comfort, I bust out this simpler but just as delicious lasagna soup recipe. First of all, fear not; you’re not putting a full lasagna in a blender… Lasagna soup is a cozy, deconstructed version of a traditional lasagna. You use most of the same ingredients to make the taste of lasagna but in soup form. It’s a bit lighter and much easier to make. Yet all the classic lasagna flavors are there: Italian sausage, garlic, Italian herbs, a tomato based sauce. It skips the bechamel sauce in favor of some optional (but highly recommended) heavy cream, and a delicious ricotta topping.

Too bland: Don’t skimp on the onion, garlic, and Italian herbs – they add necessary depth to make the robust flavor we’re after. And depending on the stock you use, you may need to add a little extra salt and pepper. Too watery: Don’t go too crazy when adding the canned tomato or stock either – if you do happen to make a soup that’s too watery, simply let it simmer away and reduce down for a bit longer. Too dry: If you’ve got something that looks more like a lasagna stew than a lasagna soup, simply add another splash of broth or some more crushed tomatoes to loosen things up a little bit. Not ‘lasagna-y’ enough: If you want to enhance that classic lasagna flavor, consider adding that dash of heavy cream and the ricotta topping, first. They echo the bechamel sauce in a traditional lasagna. If you’re still not feeling it, stir in extra tomato paste, Italian seasoning, or parmesan cheese.
