We can probably all agree that ground pork isn’t the first protein that comes to mind when we think of stir fry. It’s more common in Vietnamese cuisine, but we like it as a change from the usual chicken and beef. It’s a dish that cooks up quickly, and most of the work is in chopping the vegetables. It’s super versatile too, so you can use any leftover vegetables you have hanging out in your fridge. To make it, start by browning the ground pork. While it’s cooking, stir together the ingredients for the sauce. When the pork is mostly brown, add in the mushrooms, followed by the rest of the vegetables. Cook it all for a few minutes until the vegetables are tender but still crisp. Then pour the sauce over the stir fry and stir until it thickens, and that’s it! Keep it simple and serve it warm over a bed of brown rice, basmati rice, quinoa, noodles, or any other grain you like. For a low-carb option, try it with cauliflower rice. This stir fried ground pork is tasty and filling, and leftovers make a great lunch the next day!

Ground pork – it’s not often that we see ground pork used in stir fry but its flavor really works, and it cooks quickly, too. We opt for lean ground pork. Vegetables – we use a mix of sliced mushrooms, green beans, carrots, bell pepper, and onion but you can use any quick-cooking veggies. Snow peas, broccoli, and bok choy work great, and you could even add a bit of pineapple!

Here’s what you need for the homemade sesame ginger sauce:

Cornstarch – this thickens the sauce, giving it a nice texture and helping it to coat the pork and vegetables. Chicken broth – homemade chicken stock or a store-bought broth both work well. Soy sauce – gives the sauce a salty umami flavor. Use a low-sodium soy sauce or gluten-free if needed. Sesame oil – toasted sesame oil has a strong sesame flavor and a nutty, earthy taste. Honey – adds a bit of sweetness to balance things out. Ginger + garlic – this duo gives the sauce a good punch of flavor.
