Balsamic vinegar: there are a lot of different types of balsamic vinegar out there that range in price and quality. We tend to use a mid-range balsamic vinegar, but any kind will do. Soy sauce: soy sauce adds umami and saltiness. Use gluten-free soy sauce if needed. Garlic: mushrooms and garlic are a heavenly flavor-match, so we use a generous amount. You can use less if it’s too much for your taste. Button mushrooms: we typically use regular, white button mushrooms, but you can also use cremini mushrooms. Make sure they’re whole (not sliced, and they’re firm and dry. Butter: we use butter to sauté the garlic which adds a lot of richness. You can use a dairy-free butter alternative or olive oil if needed. Sea salt: a generous pinch of sea salt makes all the flavors pop!
