This is the best Greek salad dressing, and it’s so versatile and easy to make. Of course, it’s what we use in our Greek salad recipe, but it tastes great on grains, legumes, vegetables, and as a marinade for Greek chicken, too. If you’re not using the dressing right away, you can simply add the ingredients to a jar. When you’re ready to serve it, take it out of the fridge and let the olive oil come to room temperature before giving it a good shake and pouring it over your salad.

Olive oil – extra-virgin olive oil is full of healthy fats and may actually help you absorb the nutrition of your salad. Red wine vinegar, balsamic vinegar, and lemon juice – the mix of red wine vinegar, balsamic vinegar, and lemon juice bring a well-rounded acidity to this salad dressing. They offer a subtle sweetness, too. Feta brine – feta brine, the salty, cloudy liquid that feta cheese comes packaged in, does wonders for this dressing. Now you can put it to use instead of pouring it out! Fresh dill – dill is wonderfully fresh and tastes like anise. If you don’t like dill, you can use other fresh herbs like parsley instead. Oregano Sea salt Garlic – fresh garlic adds a kick of flavor.

Add ½ cup plain Greek yogurt to make it a creamy Greek yogurt salad dressing. Add a touch of honey for sweetness. Add a teaspoon dijon mustard for more tanginess. Mix up the herbs – while dill is a classic for Greek dressing, fresh basil, chives, and parsley are delicious additions! Add some fresh ground black pepper for a bit of a kick and depth of flavor.
