Rotisserie Chicken Tacos

Tacos are truly wonderful. They’re my go-to “clean out the fridge” meal. Simply heat up tortillas, create a filling with whatever ingredients I have, top it with cheese or our favorite toppings, and dinner is served! When I anticipate a busy week, store-bought rotisserie chicken is often on my grocery list because of its convenience and versatility. You can create so meals with it, including these pinwheel sandwiches, chicken rice balls, chicken quinoa casserole, chicken pesto flatbread…. and now these easy rotisserie chicken tacos!! Take a quick 15 minutes to enjoy the ultimate taco night at home. Not only is it more budget-friendly, but it’s also way more fun and relaxing, especially when you’ve got little ones in tow, making dining out a bit hectic.

Pre-cooked rotisserie chicken – you’ll need to remove the chicken from the bones and shred. You can purchase pre-shredded although it is more pricey. Chicken taco seasoning – you can use store-bought or homemade chicken taco seasoning, which is super easy to make and delicious! Tomato sauce- adds moisture and a saucy element to the filling Tortillas – feel free to use flour or corn tortillas or even crispy taco shells.

Shredded cheese – feel free to use your favorite variety, like cheddar, Monterey Jack, cotija cheese, or Mexican cheese blend Salsa: use store-bought or homemade – dice up tomatoes, onions, cilantro, and add a squeeze of lime Guacamole or diced avocado Fresh Vegetables – such as shredded lettuce, chopped red onion, or bell peppers for a satisfying crunch!  Greek Yogurt or Sour Cream – A cool and creamy addition to balance the heat and spices. Chopped Cilantro and Green Onions – sprinkle these herbs for a burst of freshness and a pop of color. Making a taco buffet for your little one is a playful way to make meals exciting. It will be like a mini food party that encourages them to try new textures and flavors, all while enjoying the process of creating their own tacos. If your child is learning to like mixed foods, you can serve deconstructed, while continuing to show them how you enjoy your tacos. They will catch on eventually. When ready to eat, reheat the chicken separately to maintain its juiciness. Warm the tortillas and assemble the tacos just before serving. You can also freeze your leftover chicken for up to 3 months.
