Sweet Potato Patties Recipe

Sweet potatoes are one of the most versatile and nutritious foods, and I find myself turning to them a lot of times when I need to put food on the table fast! I like to roast a whole bunch of sweet potatoes (you MUST try these Baked Korean sweet potatoes!) over the weekend so I can easily add them to various meals, like these sweet potato cookies, homemade teething biscuits, and this creamy sweet potato pasta sauce. I also heart the combination of this root vegetable and quinoa. They compliment each other so well in this vegetarian lasagna, these chickpea patties, and now these sweet potato patties! Made with just a handful of simple ingredients, you are going to love how simple and delicious these patties are!

Sweet potatoes – you will need 1 1/2 – 2 medium potatoes. Quinoa – Yellow variety will work best but you can also use red quinoa, which has a slightly chewier texture and slightly nutty flavor. Cheese – My personal favorite is cheddar but you can use any shredded cheese of choice Oregano – Again, feel free to use whatever seasoning(s) you wish, such as smoked paprika, ground cumin, curry powder, etc. But do try with oregano the first time you make these! Almond flour – Added to hold the patties together. I wanted to keep this recipe gluten-free and egg-free but any flour (e.g all purpose flour, wheat flour) will work!

Tips for Success

Cook quinoa and sweet potatoes in advance so it’s one less thing you have to do the day of. While you are at it, cook a large batch to enjoy throughout the week. You can enjoy it in Korean beef and broccoli, beef quinoa meatballs, almond butter protein balls, and overnight quinoa, the perfect make ahead breakfast! For sweet potatoes, my personal cooking method is roasting as they get nice and caramelized with a more intense flavor compared to steaming. Don’t force flip! Depending on the size of your patties, you may need to cook for longer before flipping. They should flip easily (be gentle). If they don’t, return the pan back into the oven and cook for a few more minutes until they do. Otherwise, they will break. 

Serving Suggestions

These patties are a great finger food and also a complete meal for babies. They include an iron-rich food (quinoa), high calorie food (cheese), and a vegetable (sweet potatoes). While absolutely delicious on their own, you can enjoy with any of these toppings for a boost of flavor and nutrition:

Greek yogurt or sour cream Ricotta Veggie loaded dips, such as: yogurt black bean dip beetroot dip sugar free pizza sauce beetroot pesto pumpkin seed spinach hummus Ketchup or Ranch – if your child loves these condiments and are hesitant about trying new foods, like these patties, serving them alongside their beloved foods is a great way to encourage them to try new/disliked foods.
