Ripe mangoes – You’ll need sweet, juicy mangoes for best flavor and texture. If using fresh mangoes, peel and dice them into chunks. If using frozen mangoes, thaw them first. Don’t discard the juices! Food Blender – necessary to achieve the smoothest consistency. Food Processor – will also work but won’t give you the ultra-smooth texture you’d get from a blender.
Fresh Vs. Frozen Mango
Fresh mangoes are incredible when they’re in season and perfectly ripe. When selecting your mango, give it a gentle squeeze. A ripe mango should give slightly, like a ripe avocado, and may have a fruity aroma at the stem. Note that color is not a good indicator of ripeness. So don’t go searching for the red color. Go by the feel! Having said that, sometimes they can be hit or miss – you cut into one expecting juicy sweetness, only to find it’s all brown inside. That’s why I often choose frozen mangoes. They’re readily available, super convenient, and frozen at peak ripeness, so you’re guaranteed all the flavor and nutrition without any surprises.

Storage
Transfer any leftover mango puree to an airtight container and store it in the refrigerator. It will stay fresh for up to 3 days. To freeze, pour the mango puree into ice cube trays or small freezer trays. That way you can thaw only what you need for a recipe without having to defrost the entire batch. Once frozen, transfer the cubes or containers to a freezer bag for easy storage. Mango puree can be kept frozen for up to 6 months.
