We’re winding up Back to School Snack Week with one of my favorite snack recipes. This one is a little different than the others I’ve shared. We often eat these for lunch but also keep a bag in the freezer. They’re perfect for a little after school snack.

Why chicken bites make a great lunch or snack

Start to finish, these guys take just under a half an hour to make. But if you double the recipe and freeze the extras, you’ll have a snack you can pop into the oven in about 31 seconds flat. The starch and spice coating makes them nice and crispy. You probably have the spices waiting for you in your pantry right now. They are a gluten-free, low-carb, paleo, and sugar-free snack that everyone loves.Baked chicken bites are a healthy snack!

How to make chicken bites

Making chicken bites is super easy. Here’s what you’re going to do:

Mix the spices and either cornstarch or tapioca starch. Now add the chicken pieces and coat them in the spices. I usually use a pair of kitchen scissors to cut the chicken pieces as I find it makes it extra easy.Bake the chicken bites until they’re nice and crispy then dig in!

How to freeze chicken bites

This is one of the best freezer recipes. We almost always have some in our freezer cause I love being able to quickly make something healthy for my daughter. Here’s how to freeze these bites:

Toss the chicken in the spices and starch. Now lay a piece of parchment paper on a baking sheet. This is to prevent the chicken from sticking to the tray when it’s frozen. Put the chicken pieces on the baking sheet making sure they are not touching.Freeze the chicken then put the pieces into a freezer bag.

That’s it! The chicken bites will keep well frozen for more than a month.

What to serve with baked chicken bites

I always like to dip chicken bites. Something as easy as ketchup works well. Or you can dip them in some chipotle aioli. Normally when I bake these, I throw some veggies on the tray. Broccoli, green beans, cauliflower, or some bell peppers all work well. They round out the snack or lunch and make it extra healthy. But you can easily make these as a part of a bigger meal. Here are some of my favorite recipes that turn this snack into a dinner.
