It is SO easy to make. In 10 minutes or less, you can enjoy a healthy and delicious lunch with your little one(s). This will become your go-to on days when you don’t feel like cooking. It is also super versatile. You can add whatever vegetables you have on hand. It is high in protein and fat, which will keep you and your child fuller for longer. Ingredients
Shredded chicken – I like to cook several breasts (can also use thigh meat) to enjoy throughout the week. This is such a great way to repurpose leftovers. So of course, I find different ways to make chicken salad creamy, like using avocado! You should totally try this vegetable avocado muffin recipe too! Vegetables – Feel free to use whatever you wish! I love adding finely grated carrots to baby’s food for texture exposure. Greek yogurt – Helps the avocado add creaminess to the salad as well as imparts a hint of tanginess. You can swap with a non-dairy alternative or leave out altogether, if you wish.

In a bowl, mash avocado and lime juice. Add the rest of the ingredients and stir until well-incorporated. That’s it!
How to serve curry chicken salad to babies and kids
For Babies:
Start with 1-2 tablespoons of the salad. You can always offer more. Run your knife through the mixture, making sure the chicken is finely chopped. You can serve as is, preload onto a spoon, mix into grains like quinoa, oatmeal, lentils ,etc. or spread onto toast. For Kids:
If your child feels reluctant towards sandwiches, little changes can make a big difference. Try slicing into small pieces. My son absolutely loves his tea sandwiches.
