We recommend keeping the cucumbers and radishes in the fridge so they’re nice and cold when you serve the salad. It’s one of those salads that’s best enjoyed right away so if you’re preparing it ahead of time, wait until you’re ready to serve it to toss it with the creamy dressing. Mini cucumbers – we like the crispness of mini cucumbers (aka Persian cucumbers), and they happen to be the same size as radishes when sliced. If you can’t get your hands on some, you can use an English cucumber. Field cucumbers will work in a pinch, but make sure to peel them and remove the seeds. Radishes – since radishes are one of the first vegetables of the year, we start making this salad in the spring. Radishes range in flavor from mild to hot; you can use any variety. Chives – chives have a mild onion taste and add a delicate punch of flavor to this salad. You could substitute minced green onion. Sour cream – sour cream makes this salad extra creamy and gives it a nice tang. You can use full-fat Greek yogurt if you prefer. Mayonnaise – a bit of mayonnaise adds richness and creaminess to the dressing. Lemon juice – lemon juice adds a pop of bright citrus flavor and balances out the inherent creaminess of the dressing. You could also use a little apple cider vinegar if that’s what you have on hand. Salt + black pepper – for seasoning, to taste.
We love the delicate flavor of chives but other fresh herbs like fresh dill, cilantro, or parsley taste great, too. Add some crumbled feta cheese for its tangy cheesy flavor. Toss in some chickpeas for a boost of protein. Mix in some thinly sliced red onion or minced garlic for a pungent kick. Serve it on a bed of fresh peppery arugula.
We love serving this cucumber radish salad with baked pork chops or grilled chicken breast. It also goes really well with our Thai chicken skewers! It can easily be turned into a meal with some chicken or chickpeas for protein. We’ve even been known to enjoy it on avocado toast with an egg for breakfast!
