How to store homemade chipotle mayo
Store chipotle mayo in an airtight container or jar in your refrigerator for up to two weeks. This chipotle mayo is perfectly balanced with creamy, smoky, spicy, and slightly tangy and sweet flavors. The key ingredient in chipotle mayo is chipotle peppers in adobo sauce, which are dried and smoked jalapeño peppers. They’re a staple in Mexican cooking and have a smoky, earthy taste with an underlying sweetness. You’ll find them in little jars in your grocery store near other Mexican food or online. Quick tip: when you buy a jar of chipotle pepper in adobo sauce, tip the entire contents of the jar into your blender, blend them until they’re smooth, and then transfer the blended peppers into a clean jar. They’ll keep in your fridge nearly forever. When you want to add a smoky flavor to your meals, add a spoonful of the blended peppers!
Mayonnaise – any kind of mayonnaise will work for this recipe. You can use light if you’d like, or a vegan alternative if needed. Lime juice – fresh lime juice is always best but bottled works in a pinch. Maple syrup – maple syrup adds sweetness to balance out the other flavors. You can also use another liquid sweetener like honey or agave. Chipotle peppers in adobo – we like to buy a can of chipotles in adobo sauce, purée them, and store the in the fridge for quick and easy use. You can also just use the adobo sauce. Liquid smoke – liquid smoke is an inexpensive ingredient that keeps nearly forever in your pantry. Liquid smoke adds a wonderful smoky flavor to the mayo and it’s easy to find online, or near the BBQ sauces in most grocery stores. Garlic – a finely minced garlic clove for flavor. Dijon mustard – dijon mustard adds a sharp tanginess. Salt – salt makes all the flavors pop!
