Brothy goodness: One of my favorite soup tricks is to add some scoops of collagen powder, like Vital Proteins. It dissolves and adds so much depth, making the soup taste like you’ve used homemade bone broth. Herb infusion: Freshen your soup up with some parsley, thyme, or dill. Veggie boost: Throw in any seasonal vegetables you’d like, such as bell peppers, zucchini, or peas. Spicy soup: If you love a bit of heat, you can add a kick with some red pepper chili flakes or sliced jalapeño. Creamy delight: If you want an extra comforting soup, add a splash of cream or coconut milk towards the end of the cooking process. Protein swap: You can easily use turkey or chicken breasts if that’s what you have. Heck, you can even use rotisserie chicken or use leftover chicken to keep things really simple, if you need to! Hearty additions: Add some grains, like cooked rice, quinoa, or pasta, for a bit more bite. Citrus twist: Add a squeeze of lemon juice or some lemon zest to brighten things up.

What to serve with chicken vegetable soup

This chicken and vegetable soup works as a standalone meal, but if you want to dress it up a bit, make some lemon pepper croutons for crunch, or with some sharp cheese bread bites. If you want to bulk out your soup a little bit, add some cauliflower rice. You can’t go past the timeless pairing of soup with grilled cheese. Spice up this classic combination with sriracha apple grilled cheese on the side. For other pairings, a good old salad rounds out the meal – I love this soup with a kale salad.

Storing chicken and veggie soup

Chicken and vegetable soup makes for great meal prep, and tastes even better the next day once the flavors have had more time to meld together. To store it, first let it cool to room temperature – this helps prevent it from steaming, creating condensation which will water down the flavor. Transfer it to an airtight container, seal it up, then pop it in the fridge for 3-4 days. Reheat on the stove top when you’re ready to enjoy it! If you’d like to store it for a bit longer, transfer it to a freezer-proof container, then store it in the freezer for up to three months. Thaw it out by transferring it to the fridge a day before you intend to enjoy it.
