For another flavorful rice option, this delicious garlic butter rice will steal the show! For a lighter option, make some cauliflower rice! There are three reasons I make this carrot rice recipe: when I want to sneak in extra veggies, when I want to bring some vibrant color to my plate, or when I just want my side dish to be bursting with flavor! My daughter absolutely loves it, so it’s become a staple side in our home, especially when I’m serving up some salmon, chicken, or steak.
Rice with peas and carrots: Add a handful of frozen peas in the final stages of cooking for a vibrant green boost of nutrients! Carrot and raisin rice: Mix in a quarter cup of golden raisins for a sweet and savory twist. This works great with the toasted almond slivers and a spoonful of Greek yogurt! Indian spiced carrot rice: Add a teaspoon of garam masala and a pinch of turmeric for a deeper Indian flavor. When I do this, I use cashews instead of almond slivers. Carrot chickpea rice: Stir in a cup of cooked chickpeas for a boost of protein and texture. Other nuts or herbs: The almond slivers are crunchy and delicate at the same time, which adds such a great texture to this carrot rice recipe. If you have another nut on hand, you can use whatever you please! Cashews or pine nuts work great. The same goes for herbs: garnish with parsley, chives, or basil.
Put some bourbon steak on top of the rice and let the juices drip into it – yum! My favorite chicken recipes to serve this with are harissa honey chicken, lemon garlic chicken, or balsamic chicken. The flavors of the carrot rice also complement this sheet pan salmon or my honey glazed salmon.
