We know that brussels sprouts on pizza might seem like an odd ingredient, but with the other flavors, it just totally works! The golden brown crispy sprouts are layered with sweet caramelized red onions, then dotted with salty, sharp blue cheese. Then, it’s all finished off with a tangy and sweet balsamic glaze. This is the pizza we make in the depths of winter when we want something comforting and delicious, that’s also quick and easy. Since we always find ourselves with heaps of extra brussels sprouts around Thanksgiving and Christmas, that’s when we often make it. It’s always a welcome change from the usual fall fare. It’s definitely an adult pizza, so you won’t have to share this one with hungry kiddos (unless your kid is a unicorn, which is awesome except that you’ll have to share). Enjoy it as a weeknight meal or slice it small and serve it as an appetizer.
Pizza crusts – we use our favorite homemade pizza dough recipe, but if you haven’t ventured into pizza dough-making, take a shortcut and use store-bought pizza dough. Use gluten-free, if needed. Brussels sprouts – we cut them in half and roast them so they’re tender before adding them to the pizza. Olive oil – for coating the brussels sprouts so they cook evenly. Red onion – when red onions are caramelized, they become sweet and complex. Sugar – just a sprinkle of sugar helps the onions caramelize. Parmesan cheese and blue cheese – for lots of bold, salty, cheesy flavor. Not a fan of blue cheese? Feel free to swap it for goat cheese, feta cheese, or another cheese you love. Balsamic glaze – not only does the sweet and tangy balsamic glaze bring everything together, but it also takes this pizza to the next level!
