There are so many different ways to prepare and enjoy beets. I’ve certainly shared my fair share of them, which I will link below! And while I LOVE them simply roasted, my baby much rather prefer them incorporated into something else. Because it’s an excellent source of folate, vitamin C, fiber, and iron, to name a few, I want to incorporate this nutrient-dense vegetable into her diet as much as possible. It’s also one food that really helped both of my kids with constipation. This and chia seeds. You are going to love how easy it is to whip up this pink beet hummus and its versatility! Ingredients
Beets – Here are the two ways I like to cook them. I normally make a big batch and freeze what I don’t use so I can easily thaw in the fridge and make muffins, pancakes, dips, etc (recipes linked below). Chickpeas – Feel free to swap out with any bean(s) of choice! It’s good with cannellini and black beans too! Garlic – Start with 1/2 teaspoon of minced garlic and add more to taste at the end Olive oil – feel free to add more if the consistency is too thick for your liking Lemon – again add more to taste.

How to serve beet hummus to babies and kids
For babies:
Mix in nuts/seeds for a boost of fat and nutrition. Preload onto a spoon and either hand it to them or place on the table/plate. Most likely your baby will go right in with their hands and that’s ok too! As hard as it may be, try to embrace the mess. It’s an important part of learning to self feed. Spread on the tip of cooked vegetables Spread on baked goods Spread on toast Mix in with oatmeal, lentils, pasta Add to grilled cheese

For toddlers:
Along with the suggestions above, try laying out a bowl of hummus alongside an assortment of vegetables, crackers, bread, etc., and let them have fun exploring all the different textures and flavors. Be sure to include a vegetable your child doesn’t like (yet!). Kids love to dip and it just might encourage your child to give the veggie a try!
